How to Prepare

Preparing Lemon and Ginger Snack Balls is as simple as 3 easy steps:

1. Wash hands. Mash up your over ripe banana (100g) with a fork in a bowl or blender until looks like a puree.

2. Add the mix to the banana in the bowl and bind together for a spoon.

3. Using at tsp of mixture, roll into balls and optional to roll in coconut or extra lemon zest.

They are ready to eat straight away!

Get playful with the kids and make into any shape you want. Don't worry if you don't have a over ripe banana or don't even like bananas! Get creative and add the ingredients you and your kids want to eat (see below for some ideas).

Make it Your Own and Have Fun

    • If you don't like banana - try 1/4 cup water or lemon juice and honey, or 1/3 cup apple puree or 1/3 cup coconut cream.
    • Add extra lemon zest to it.
    • For an energy boost - add some peanut butter or favourite nut butter.
    • You can also add protein powder for growing muscles.
    • For good gut health and probiotics, add some Greek probiotic yoghurt as this will bind the mixture. Although you will still need to use a sweetener if you don't use banana.
    • Whatever you add, just add enough to keep in a dough-like consistency.
    • You can also make cookies! Line a baking tray with baking paper and pop your balls on there, press gently with a fork to resemble a cookie shape and bake in the oven on 180 for 15mins.
